Caribbean Spiny Lobster

Panulirus argus

Caribbean Spiny Lobster
Where to See It Reef crevices and ledges, island-wide

Unlike its cold-water cousins it has no great claws, defending itself instead with long, spiny antennae and a powerful flick of the tail. By day it shelters deep in reef crevices, antennae waving at the entrance; by night it forages across the seabed. It is prized in the kitchen, and a managed closed season protects it — enjoy it responsibly and in season.
