The clove is a flower bud, picked before it opens and dried until dark and hard. Intensely aromatic, it scents Grenada's kitchens, its famous rum punch and the spice-laden air of the market stalls. A handful of estates still grow it alongside the cocoa and nutmeg, and a few cloves find their way into almost every island celebration.
